Bean to Bar or Tree to Bar? The Difference Matters

Most craft chocolate calls itself bean to bar. At Safran Club we prefer a older, narrower phrase: tree to bar. Here is why the distinction matters for flavour, transparency and the growers behind every bar.

What does "bean to bar" actually mean?

"Bean to bar" simply means the maker started with dried cacao beans and finished with a chocolate bar. It is a useful label, but it is also a wide one. A bean-to-bar maker might buy beans from a broker, roast them in a city thousands of miles from the farm, and never meet the grower. The term tells you something about process; it tells you very little about provenance.

So what is "tree to bar"?

Tree to bar means we follow the cacao from the tree itself. We know the estate, the harvest week, the fermentation boxes and the drying racks. The beans travel a short, traceable path before they are roasted, conched and tempered.

For Safran Club, this is not a marketing flourish. It is how we choose what lands in your box. Every month we feature a single origin — one farm, one harvest, one flavour snapshot — because chocolate tastes different when you know where it grew.

Why it changes the flavour

Cacao is a fruit. Like wine grapes, it picks up the soil, rainfall and microbes of one place. When a bar is blended from many sources, those details are averaged away. A tree-to-bar bar keeps them intact.

You will taste it as:

  • Brightness in a Madagascar bar — red fruit and citrus.
  • Depth in an Ecuadorian bar — nuts, earth and jasmine.
  • Creaminess in a Sierra Leonean bar — cocoa-buttery and gentle.

These are not added flavours. They are the place, preserved.

What about the growers?

Tree to bar also means shorter supply chains. We buy from estates we have visited or partnered with directly, often at premiums well above commodity rates. The growers are not anonymous suppliers; they are partners whose names we print on the origin cards inside every box.

How Safran Club fits in

We are a tree-to-bar club, not a shop. Each month Chef Safran selects a harvest, roasts it in small batches, and sends it to members who have already chosen how they like their chocolate — Strong Dark, Medium Dark, Dolce or Surprise Me.
